  • 1 can (15 ounces) pumpkin purée
  • 2 cloves garlic, minced
  • Juice of ½ lemon
  • ⅓ cup tahini
  • 1 tablespoon pure maple syrup
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • ¾ teaspoon ground cinnamon
  • Pinch of cayenne pepper
  • ¼ cup olive oil
  • ¼ cup ice water

Instructions

  1. In a food processor, combine chickpeas, pumpkin purée, and minced garlic. Pulse until broken down.
  2. Add lemon juice, tahini, maple syrup, salt, cumin, cinnamon, and cayenne pepper. Blend while slowly drizzling in olive oil for about 2-3 minutes.
  3. Gradually add ice water one tablespoon at a time until you reach the desired creamy texture.
