  • 45 lb beef shoulder roast
  • 2 tablespoons neutral oil
  • Kosher salt
  • Freshly cracked black pepper
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons Dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic
  • 3 sprigs rosemary
  • 4 sprigs thyme
  • 1 red onion, cut into thick slices
  • 2 firm and slightly tart apples, peeled and cut into wedges

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Trim excess fat from the beef shoulder and cut into four large pieces. Pat dry.
  3. In a large Dutch oven, heat neutral oil over medium-high heat and sear beef until browned on all sides (about 4-5 minutes per side).
  4. Whisk together apple cider, chicken stock, Dijon mustard, and dehydrated minced onion in a bowl.
  5. Pour braising liquid over seared beef; add garlic, rosemary, and thyme.
  6. Cover and braise in the oven for about 3 hours, flipping halfway through.
  7. Add red onion slices and apple wedges during the last 30-45 minutes of cooking.
  8. Let rest for 30 minutes before serving.
