  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream (or Greek yogurt)
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • ¼ teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat oven to 350°F. Butter a 9-inch square baking dish and line with parchment paper.
  2. In a pan, boil the apple cider until reduced by half (about 5 minutes). Measure out ¾ cup of reduced cider.
  3. In a bowl, whisk together eggs, sugars, oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt.
  4. Slowly mix in the reduced cider until combined.
  5. Gently fold in the flour until just incorporated.
  6. Pour batter into the prepared dish and bake for 22 to 25 minutes until golden brown.
  7. Cool slightly then brush with room temperature butter and sprinkle with cinnamon-sugar mixture before cutting into squares.
