  • 1 cup apple cider, reduced to ¼ cup
  • ½ cup whole milk
  • ½ cup unsalted butter, softened (for buttercream)
  • 3 cups powdered sugar
  • ¼ cup reduced apple cider (for buttercream)
  • 1 tsp vanilla extract (for buttercream)
  • Pinch of salt (for buttercream)
  • ½ cup store-bought caramel sauce
  • Pinch of flaky sea salt (optional)

Instructions

  1. Reduce 1 cup of apple cider in a saucepan until it measures ¼ cup; allow to cool.
  2. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. In one bowl, mix flour, baking soda, baking powder, salt, and spices. In another bowl, cream together softened butter and brown sugar until fluffy.
  4. Add egg and vanilla; mix well. Gradually incorporate cooled apple cider reduction and dry ingredients alternately with milk.
  5. Drop tablespoon-sized rounds onto prepared sheets and bake for 10-12 minutes until firm.
  6. For filling, beat softened butter with powdered sugar, reduced apple cider, vanilla extract, and salt until fluffy.
  7. Assemble whoopie pies by spreading buttercream on one cookie half and topping with another.
