  • 1 1/2 cups cold unsalted butter, cubed
  • 1 large egg, lightly beaten
  • 2 cups dried apricots, chopped
  • 1 1/2 cups water
  • 1/2 cup granulated sugar (for filling)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the apricot filling by simmering chopped dried apricots, water, and sugar in a saucepan until tender. Stir in lemon juice and cool.
  2. Preheat oven to 375°F (190°C). Grease and flour a baking pan.
  3. In a bowl, mix flour, sugar, baking powder, and salt. Cut in cold butter until crumbly. Combine with the egg and vanilla until just mixed.
  4. Press half of the dough into the pan, spread cooled apricot filling on top, and crumble remaining dough over it.
  5. Bake for 30-35 minutes until golden brown. Cool completely before cutting into bars.
