3 cups butternut squash, peeled and cubed
340 g Brussels sprouts, trimmed and halved
225 g bow tie pasta
340 g cooked smoked sausage (chicken or turkey sausage can be used)
5 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
Salt and pepper, to taste
¼ teaspoon smoked paprika
Fresh thyme leaves
Instructions
Preheat the oven to 200°C (400°F). Toss cubed butternut squash with olive oil, salt, and pepper; spread on a baking sheet and roast for 15-20 minutes until tender.
On another sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast for 20-30 minutes until golden brown.
Cook bow tie pasta in salted water according to package directions until al dente; reserve some pasta water.
In a skillet over medium heat, sauté sliced sausage until browned. Remove from skillet.
In the same skillet, sauté garlic until fragrant; add butter then toss in cooked pasta along with reserved pasta water.
Add roasted vegetables and sausage back into the skillet; mix well and season with fresh thyme.
