  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a bowl, mix the cream cheese, cheddar cheese, jalapeños, green onion, garlic powder, salt, and pepper until well combined.
  2. Lay an eggroll wrapper on a clean surface diagonally. Place about 2 tablespoons of the filling in the center.
  3. Fold the bottom corner over the filling, fold in the sides, and roll tightly to seal.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C).
  5. Fry the eggrolls seam side down for about 3-4 minutes or until golden brown.
  6. Drain on paper towels and serve hot with your choice of dipping sauce.
