  • 4 Tasmanian salmon fillets (6 oz each)
  • 1 lb asparagus spears
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried thyme (or fresh thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Pat the salmon fillets dry and place them on one side of the baking sheet.
  4. In a bowl, combine olive oil, lemon juice, minced garlic, thyme, salt, and pepper.
  5. Toss the asparagus in half of the marinade and arrange on the other side of the baking sheet. Drizzle remaining marinade over the salmon.
  6. Bake for 15-20 minutes or until salmon flakes easily with a fork.
