  • 1 homemade double pie crust (2 sheets of pie dough)
  • 1/4 teaspoon lemon zest
  • juice from half a lemon (2 tablespoons)
  • 5 pounds apples (mix of Granny Smith, Gala, and Golden Delicious recommended)
  • 3/4 cup brown sugar (packed)
  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (for brushing on pie)
  • 1 tablespoon raw sugar (for topping)

Instructions

  1. Preheat your oven to 425°F.
  2. Prepare the apple filling by peeling and slicing about 11 large apples into thin pieces. Toss them with lemon zest and juice to keep them fresh.
  3. In a skillet over medium heat, combine the sliced apples with brown sugar, granulated sugar, flour, salt, cinnamon, nutmeg, and vanilla.
  4. Cook for about 20 minutes until the apples are tender.
  5. Roll out your pie crusts and fit one into a deep dish. Fill with the cooled apple mixture and top with the second crust.
  6. Crimp edges and vent the top crust to allow steam to escape.
  7. Brush with milk and sprinkle raw sugar before baking in the preheated oven for about 15 minutes at high heat then reduce to 350°F for an additional 40–45 minutes.
  8. Allow cooling before serving.
