  • 1 packet (7g) instant yeast
  • ½ teaspoon salt
  • ½ cup warmed whole milk
  • 2 large eggs
  • ¼ cup melted unsalted butter
  • For the cream filling: 2 cups whole milk
  • ½ cup granulated sugar
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 teaspoons vanilla extract

Instructions

  1. In a large bowl, combine flour, sugar, yeast, and salt. In another bowl, mix warmed milk, eggs, and melted butter. Combine wet and dry ingredients and knead until smooth.
  2. Cover and let rise in a warm place for about 1 hour until doubled in size.
  3. Prepare the pastry cream by heating milk and sugar. Whisk together egg yolks and cornstarch; temper with warm milk then return to heat until thickened.
  4. Roll out the risen dough and cut into circles. Let them rise again for 30 minutes.
  5. Heat vegetable oil in a deep pot to about 350°F (175°C). Fry dough circles until golden brown on both sides.
  6. Cool slightly before filling with pastry cream using a piping bag. Dust with powdered sugar before serving.
