  • 1 teaspoon kosher salt
  • 5 Tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 Tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons unsalted butter (melted and cooled)
  • 2 1/2 Tablespoons milk

Instructions

  1. Cream together room-temperature butter, granulated sugar, and light brown sugar until fluffy. Add eggs and vanilla, mixing well.
  2. In another bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt. Gradually combine with the creamed mixture until just mixed.
  3. Chill dough for 1 hour in the refrigerator.
  4. Preheat oven to 350°F (175°C) and prepare baking sheets.
  5. Prepare the filling by mixing softened butter with brown sugar, cinnamon, and cake flour until smooth.
  6. Scoop chilled dough (1/4 cup), flatten it, place a ball of filling in the center, cover it with another half of dough, and seal edges.
  7. Bake for 11-13 minutes or until set but soft in the center. Cool before icing.
