  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 packages (8 oz.) cream cheese, softened
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 cups granulated sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon butter flavoring
  • 1/2 cup butterscotch sauce
  • 1/2 cup butterscotch chips
  • 8 oz. tub of whipped topping
  • 1/4 cup cream soda

Instructions

  1. Preheat the oven to 325°F (160°C) and prepare a springform pan by pressing graham cracker crumbs mixed with sugar and melted butter into the bottom.
  2. In a large bowl, beat softened cream cheese until smooth. Add sour cream and mix well.
  3. Gradually incorporate sugar while mixing. Then add eggs one at a time until fully blended.
  4. Stir in vanilla extract, butter flavoring, butterscotch sauce, cream soda, and butterscotch chips until smooth.
  5. Pour the mixture over the crust in the springform pan and bake for about 60 minutes or until just set around the edges.
  6. Allow to cool in the oven with the door slightly ajar for an hour before refrigerating for at least four hours or overnight.
  7. Serve chilled with whipped topping and extra butterscotch drizzle.
