  • 30 grams olive oil
  • 50 grams butter
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter (for the dough)
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese

Instructions

  1. Roast the garlic: Cut the top off a garlic head, drizzle with olive oil and sprinkle with salt. Wrap in foil and roast at 160°C (320°F) for about 2 hours until soft.
  2. Prepare garlic butter: Mix roasted garlic with softened butter and chopped parsley.
  3. Activate yeast: Combine warm milk, yeast, and honey in a bowl; let proof for 10 minutes.
  4. Make dough: Mix flour, sugar, butter, salt, egg yolks, and the yeast mixture until combined.
  5. Knead: Use a dough hook to knead for 15-20 minutes until smooth.
  6. Proof: Let dough rise in a warm place until doubled in size (about 1 hour and 30 minutes).
  7. Shape rolls: Roll out the dough, spread garlic butter on top, add mozzarella cheese, then roll tightly.
  8. Cut into portions: Slice into six equal pieces and let proof again for another 30 minutes.
  9. Bake: Preheat oven to 175°C (350°F), brush with an egg wash, then bake for 20-25 minutes until golden brown.
