  • 1 tsp lemon zest
  • ½ cup mini chocolate chips
  • ½ cup chopped pistachios
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour and sugar until combined.
  3. In another bowl, mix ricotta cheese, egg, vanilla extract, and lemon zest until smooth.
  4. Gradually incorporate the dry ingredients into the wet mixture to form a soft dough.
  5. Cover the dough with plastic wrap and let it rest for 30 minutes.
  6. Roll out the dough on a floured surface to about ¼ inch thick and cut into rectangles (2×3 inches).
  7. In a separate bowl, combine ricotta cheese with mini chocolate chips and chopped pistachios for filling.
  8. Place a spoonful of filling in the center of each rectangle, fold over to seal well.
  9. Bake for 15-18 minutes until golden brown.
  10. Cool slightly before dusting with powdered sugar.
