  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces fresh mozzarella cheese
  • 2 large ripe tomatoes
  • 1/2 cup fresh basil leaves
  • 2 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant. Add seasoned chicken breasts and cook until golden brown on both sides.
  3. In a baking dish, layer half the cooked chicken, followed by half the tomatoes and mozzarella. Sprinkle dried oregano before repeating the layers.

  5. Remove foil, add chopped basil on top, and bake uncovered for an additional 10-15 minutes until golden.
