  • 4 large flour tortillas
  • 2 cups diced Russet potatoes (about 2 medium potatoes)
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt, to taste
  • ¼ cup chopped green onions
  • ½ cup fresh salsa

Instructions

  1. Peel and dice the potatoes into small cubes. Boil in salted water for about 15 minutes until fork-tender.
  2. Drain potatoes and return to pot. Add shredded cheese, sour cream, cumin, paprika, and salt. Mash until creamy and well combined.
  3. Lay a tortilla flat and spoon potato mixture onto one half. Fold sides over and roll tightly from one end.
  4. Heat oil in a skillet over medium heat. Cook each burrito seam-side down for about 3-4 minutes per side until golden brown.
