Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 packet fajita seasoning
  • 3 bell peppers (assorted colors)
  • 1 large onion
  • 1.5 cups uncooked long-grain white rice
  • 3 cups chicken broth

Instructions

  1. Marinate the chicken: Combine olive oil, lime juice, fajita seasoning, smoked paprika, cumin, salt, and pepper in a bowl. Add chicken strips and coat well. Let marinate for at least 30 minutes.
  2. Cook the rice: Bring chicken broth to a boil in a saucepan. Add rice and salt if using water. Lower heat, cover, and simmer until tender.
  3. Sauté veggies: Heat olive oil in a skillet over medium-high heat. Sauté sliced onions and bell peppers until tender-crisp.
  4. Cook chicken: Push veggies aside in the skillet and add marinated chicken strips. Cook until golden brown and cooked through (about 6-8 minutes). Stir everything together.
  5. Assemble bowls: Fluff cooked rice and divide among serving bowls. Top with sautéed chicken and veggies, then add desired toppings.
