  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth (or vegetable broth)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp dried thyme or Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C) and grease your baking dish.
  2. In a skillet over medium heat, heat olive oil. Season chicken breasts with salt, pepper, and thyme. Sear each side for 5-6 minutes until golden brown; set aside.
  3. In the same skillet, sauté garlic until fragrant. Add mushrooms and cook for about 5 minutes until softened. Stir in spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer for 3-4 minutes to thicken the sauce.
  5. Place seared chicken in the baking dish and pour the spinach-mushroom sauce over it. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until the cheese is melted and bubbly.
  7. Let cool slightly before serving; garnish with parsley if desired.
