  • 1 cup all-purpose flour
  • ¼ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • ½ tsp espresso powder
  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips + a few extra for the top
  • ½ cup semi-sweet chocolate chips + a few extra for the top
  • 1 tbsp all-purpose flour (for dusting chocolate chips)
  • ¼ banana (2 long thin slices off of a banana)
  • 1 tsp granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased loaf pan.
  2. In a large bowl, combine flour, cocoa powder, baking soda, salt, and espresso powder.
  3. In another bowl, mix olive oil, sugars, eggs, vanilla extract, sour cream, and mashed bananas until smooth.
  4. Gradually add dry ingredients to wet ingredients; stir gently until just combined.
  5. Fold in dusted chocolate chips.
  6. Pour half the batter into the pan, layer with banana slices and remaining batter; sprinkle extra chocolate chips on top.
  7. Bake for about 55 minutes or until a toothpick comes out clean.
  8. Let cool before slicing.
