Ingredients

  • 3 cups bread flour
  • 1/4 tsp active dry yeast
  • 1 1/4 tsp coarse salt
  • 1 2/3 cup warm water
  • Pear
  • Pearl onions
  • Cherry tomatoes
  • Thinly sliced red onion
  • Fresh rosemary sprigs
  • Coarse salt
  • Plenty of olive oil (a few Tbs.)

Instructions

  1. In a large bowl, combine bread flour, active dry yeast, and coarse salt. Whisk until mixed.
  2. Gradually add warm water and stir with a wooden spoon until the dough is shaggy. Cover and let it sit overnight (at least 12 hours).
  3. The next day, drizzle olive oil in a casserole dish (7×12 inches). Transfer the risen dough into the dish, shaping it snugly and dimpling the surface.
  4. Let the dough rest for an additional 2 hours.
  5. Preheat your oven to 400°F (200°C).
  6. Decorate with rosemary, sliced pear, halved cherry tomatoes, and pearl onions. Sprinkle coarse salt on top.
  7. Bake for about 25 minutes until golden brown. Allow to cool slightly before slicing.
