  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter
  • 16 oz cream cheese
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 2 (3.4 oz) boxes of instant coconut cream pudding mix
  • 3 cups half-and-half
  • 16 oz Cool Whip
  • 1 cup sweetened shredded coconut

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, sugar, and melted butter. Press firmly into a 9×13 inch dish.
  2. For the cream cheese layer, beat softened cream cheese, powdered sugar, and coconut extract until smooth; fold in half of the Cool Whip and spread over the crust.
  3. In another bowl, whisk together pudding mix and half-and-half until thickened; pour over the cream cheese layer.
  4. Spread remaining Cool Whip on top and sprinkle with toasted shredded coconut.
  5. Cover and chill in the refrigerator for at least six hours or overnight before serving.
