  • 5 eggs
  • 1/2 cup powdered sugar
  • 8 oz mascarpone
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup vanilla extract (alcohol-free)
  • 24 ladyfingers
  • 1 tsp cinnamon
  • 2 cups coconut flakes

Instructions

  1. In a large bowl, whisk together 5 egg yolks and 1/4 cup powdered sugar until pale yellow.
  2. Add 8 oz mascarpone, 1/2 cup coconut cream, and half of the coconut milk; mix until smooth.
  3. In another bowl, whip remaining heavy cream and powdered sugar until stiff peaks form; fold into mascarpone mixture.
  4. In a separate bowl, combine sweetened condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon.
  5. Dip ladyfingers briefly in the mixture and layer in your pan.
  6. Spread half of the cream mixture over ladyfingers; sprinkle with 1 cup coconut flakes.
  7. Repeat layers and finish with remaining cream mixture and coconut flakes on top.
  8. Chill for at least 12 hours before serving.
