  • 4 bone-in chicken thighs
  • 1 cup apple vinegar
  • 8 oz cremini mushrooms, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 sprigs thyme
  • 2 bay leaves
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups low-sodium chicken stock

Instructions

  1. Prepare your ingredients by chopping vegetables and measuring the apple vinegar.
  2. In a large Dutch oven over medium heat, sear chopped bacon until crispy. Remove and set aside.
  3. Brown chicken thighs skin-side down until golden brown; remove from pot.
  4. Sauté onions, garlic, mushrooms, carrots, and celery in the rendered bacon fat for about 5 minutes.
  5. Deglaze the pot with apple vinegar; scrape up any bits stuck to the bottom and simmer for 2-3 minutes.
  6. Add chicken stock, thyme, bay leaves, cooked bacon, and browned chicken back into the pot.
  7. Cover partially and let simmer on low heat for 30-40 minutes until chicken is tender.
