  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, add olive oil and sauté the diced onion and bell pepper until soft (3–4 minutes).
  3. Add chopped spinach to the skillet and cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth. Stir in Italian seasoning along with salt and pepper.
  5. Gently fold in the sautéed vegetable mix and shredded cheese until combined.
  6. Grease a 9-inch pie dish lightly and pour in the mixture evenly.
  7. Bake for about 40–45 minutes until golden brown on top and set in the center. Allow to cool for 5–10 minutes before slicing.
