  • ½ cup unsalted butter
  • 12 oz linguine pasta
  • 4 cloves garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cayenne pepper
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • ½ teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley, chopped (plus more for garnish)

Instructions

  1. Season sliced chicken with smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken until golden brown (4–5 minutes per side).
  2. Boil salted water in a large pot and cook linguine according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  3. In the same skillet used for chicken, melt butter over medium heat and sauté minced garlic until fragrant. Stir in Dijon mustard, lemon juice, red pepper flakes, Italian seasoning, and parsley; simmer for 1–2 minutes.
  4. Combine cooked linguine with the cowboy butter sauce in the skillet. If needed, add reserved pasta water to adjust consistency. Slice cooked chicken and mix it back into the pasta.
  5. Serve warm with fresh parsley on top.
