  • 15.5 oz. black beans, drained and rinsed
  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple cider vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Drain and rinse the black beans, black-eyed peas, and corn under cold water.
  2. In a large bowl, combine the rinsed beans and corn with chopped cilantro, diced red and orange bell peppers, and diced red onion.
  3. In a separate bowl, whisk together chili powder, salt, sugar, olive oil, apple cider vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean and vegetable mixture; gently stir until everything is evenly coated.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
