  • 1 cup sliced carrots
  • 4 oz mushrooms, sliced
  • 1 large shallot or small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken stock or broth
  • 1 cup milk (unsweetened almond milk works well)
  • 12 oz package gluten-free gnocchi
  • 1½ cups shredded chicken breast
  • ½ cup frozen peas

Instructions

  1. In a Dutch oven over medium-high heat, melt butter and sauté carrots, mushrooms, celery, and shallots until tender.
  2. Add garlic along with poultry seasoning and dried thyme; sauté until fragrant.
  3. Sprinkle flour over the veggies and stir to coat. Pour in chicken broth and milk; bring to a simmer.
  4. Add gnocchi and cook until tender.
  5. Stir in shredded chicken and peas; adjust seasoning if needed. Serve hot.
