  • 1½ cups orzo pasta
  • 3 cups vegetable broth
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup heavy cream
  • 2 cups baby spinach, roughly chopped
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper; roast for about 25–30 minutes until tender.
  2. In a large saucepan over medium heat, melt butter and sauté minced garlic until fragrant (about 1 minute).
  3. Add orzo pasta to the pan; toast lightly for about 2 minutes.
  4. Pour in vegetable broth; bring to a simmer and cook for 10–12 minutes until orzo is tender.
  5. Stir in grated Parmesan cheese and heavy cream. Add chopped spinach; cook until wilted.
  6. Gently fold in roasted butternut squash. Adjust seasoning if needed and serve warm garnished with fresh parsley.
