3–4 lbs ripe organic tomatoes
2 bulbs garlic
1/2 onion
1 Tbsp extra virgin olive oil
4 Tbsp tomato paste
1 tsp sea salt
1 tsp On Everything All-Purpose Blend
1/2 tsp smoked paprika
1 1/2 cups organic heavy cream
Instructions
Preheat oven to 400°F (200°C). Arrange tomato wedges and unpeeled garlic on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for about 30 minutes until caramelized.
In a large pot over medium heat, sauté chopped onions until translucent.
Squeeze softened garlic from skins into the pot with onions. Add roasted tomatoes, tomato paste, and vegetable stock; simmer for 10 minutes.
Stir in heavy cream and heat through for another few minutes.
