  • 34 lbs ripe organic tomatoes
  • 2 bulbs garlic
  • 1/2 onion
  • 1 Tbsp extra virgin olive oil
  • 4 Tbsp tomato paste
  • 1 tsp sea salt
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika
  • 1 1/2 cups organic heavy cream

Instructions

  1. Preheat oven to 400°F (200°C). Arrange tomato wedges and unpeeled garlic on a baking sheet. Drizzle with olive oil and sprinkle with salt. Roast for about 30 minutes until caramelized.
  2. In a large pot over medium heat, sauté chopped onions until translucent.
  3. Squeeze softened garlic from skins into the pot with onions. Add roasted tomatoes, tomato paste, and vegetable stock; simmer for 10 minutes.
  4. Stir in heavy cream and heat through for another few minutes.
  5. Taste and adjust seasoning before serving hot.
