  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 2 cups heavy cream
  • 3 cloves garlic, minced
  • 1 ½ cups cheddar cheese, grated
  • 4 tbsp unsalted butter
  • Salt and pepper, to taste
  • Fresh herbs (thyme or rosemary), optional

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. Thinly slice the Yukon Gold potatoes into 1/8-inch rounds.
  4. In a skillet over medium heat, melt the butter and sauté minced garlic until fragrant.
  5. In a bowl, combine heavy cream with salt, pepper, and half of the cheddar cheese.
  6. Layer half of the sliced potatoes in the greased dish, pour half of the cream mixture over them. Repeat layering with remaining potatoes and finish with the remaining cheese on top.
  7. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
