  • 2 tablespoons olive oil
  • 1 pound ground turkey or chicken sausage
  • 4 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. Cook the penne in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat. Brown the ground turkey or chicken sausage for about 5-7 minutes; set aside.
  3. Lower heat and sauté minced garlic for 1 minute. Stir in sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Add heavy cream and simmer for about 3-5 minutes.
  4. Mix in grated Parmesan until melted, then return sausage to the skillet along with baby spinach. Cook until the spinach wilts.
  5. Combine with cooked penne. Adjust consistency with reserved pasta water if needed.
  6. Serve hot, garnished with fresh basil and more Parmesan if desired.
