  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 6 slices turkey bacon, chopped (or tempeh bacon)
  • 2 tbsp honey
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry baby potatoes; slice them in half.
  3. In a large bowl, mix halved potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper until well coated.
  4. Spread the seasoned potatoes on a baking sheet in a single layer.
  5. Distribute chopped turkey bacon evenly over the potatoes.
  6. Roast for 30-35 minutes, flipping halfway through until crispy.
  7. Drizzle honey over the potatoes during the last five minutes of roasting.
  8. Remove from oven and let cool slightly before garnishing with fresh parsley.
