  • 2 eggs
  • 2 tablespoons water
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • oil for frying
  • sea salt flakes (for garnish, optional)
  • sweet chili sauce (for serving)

Instructions

  1. Set up four shallow bowls: mix flour, chili powder, salt, and pepper in the first; whisk eggs and water in the second; place coconut flakes in the third; and panko breadcrumbs in the fourth.
  2. Coat each chicken tender first in the flour mixture, then dip it into the egg wash, followed by pressing into the coconut and panko.
  3. Heat oil in a skillet over medium heat. Fry tenders for about 2-3 minutes on each side until golden brown.
  4. Drain on paper towels and serve warm with sweet chili sauce.
