4 small to medium chicken breasts (or 2 large halved)
Salt and pepper to taste
2 tablespoons olive oil
3–4 cloves garlic, minced
1 cup light cream or heavy cream
1 tablespoon Italian seasoning or oregano
1/2 cup parmesan cheese, grated
1 cup spinach, chopped (optional)
Instructions
Season chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook chicken for about 5-6 minutes per side until golden brown and crispy.
Remove chicken from the skillet and set aside. Add minced garlic to the same pan and sauté for about 30 seconds until fragrant.
Pour in the cream while stirring continuously. Add Italian seasoning and parmesan cheese, mixing until well combined.
If using spinach, stir it into the sauce and simmer for an additional 2-3 minutes.
Return the chicken to the pan, spooning sauce over each piece; let simmer for one more minute before serving.
