  • 1 tablespoon minced garlic
  • 1 can crushed tomatoes (28 oz)
  • 1 can tomato sauce (15 oz)
  • 4 cups chicken broth
  • 1 cup freshly shaved parmesan cheese
  • 1 cup heavy whipping cream
  • 8 oz uncooked rotini pasta
  • Shredded mozzarella for topping

Instructions

  1. In your crockpot, combine chicken breasts, minced garlic, crushed tomatoes, tomato sauce, salt, pepper, Italian seasoning, and chicken broth.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  3. Shred the chicken in the pot using two forks. Stir in parmesan cheese, heavy cream, and rotini pasta.
  4. Cover and cook on low for another 30 minutes or high for 15 minutes until pasta is tender.
  5. Toast breadcrumbs in butter until golden brown.
  6. Serve soup topped with shredded mozzarella and crispy breadcrumbs.
