  • 34 lbs boneless beef shoulder
  • 1 large yellow onion, sliced
  • 5 garlic cloves, crushed
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 2 tsp smoked paprika
  • Juice of 2 limes
  • 1 cup low-sodium chicken broth
  • 1 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Prepare the Marinade: In a bowl, combine ground cumin, dried oregano, smoked paprika, brown sugar, salt, and pepper. Rub generously over the beef shoulder and marinate overnight for optimal flavor.
  2. Sauté Onions & Garlic: Select ‘sauté’ on your Instant Pot. Add sliced onions and cook until translucent. Stir in crushed garlic until fragrant.
  3. Cook the Beef: Place marinated beef atop sautéed onions and garlic. Pour in chicken broth and squeeze fresh lime juice over it. Secure lid and set to ‘manual’ high pressure for 60 minutes. Allow natural release for 15 minutes.
  4. Shred & Serve: Use two forks to shred the beef inside the pot, mixing with cooking liquids for moisture.
