  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1 cup chopped white fingerling potato
  • 2 garlic cloves, minced
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 teaspoons turmeric
  • 2 teaspoons ground cumin
  • 2 cups mixed lentils (green and red)
  • 4 cups vegetable broth
  • 2 cups water
  • 1/4 cup tomato paste
  • 1 cup almond milk (or coconut milk)
  • 23 cups spinach

Instructions

  1. In a large stockpot, heat avocado oil over medium heat. Sauté onions, celery, carrots, potatoes, and garlic for about 5 minutes until softened.
  2. Stir in salt, pepper, turmeric, cumin, and other spices; cook for an additional 2 minutes to enhance flavors.
  3. Add both green and red lentils to the pot and sauté for another 2 minutes.
  4. Pour in vegetable broth, water, and tomato paste; stir well. Bring to a boil then reduce heat to simmer for approximately 30 minutes.
  5. After cooking, stir in almond milk (or coconut milk), lemon juice, and spinach until wilted. Serve hot.
