  • 1 lb ground turkey sausage
  • 5 cups chicken stock
  • 1 cup heavy whipping cream
  • 2 cups chopped fresh kale
  • 3 garlic cloves (minced)
  • 1 medium white onion (peeled and diced)
  • Salt and black pepper (to taste)

Instructions

  1. In a large pot over medium-high heat, cook the ground turkey sausage until browned. Use a slotted spoon to transfer it to a plate, reserving some grease.
  2. Add diced onions to the pot and sauté for about 5 minutes until softened. Stir in minced garlic and sauté for another minute.
  3. Add diced potatoes and chicken stock to the pot along with the cooked sausage. Bring to a simmer.
  4. Reduce heat to medium-low and let simmer for about 10 minutes until potatoes are tender.
  5. Stir in chopped kale and heavy whipping cream; simmer for an additional 5 minutes. Season with salt and pepper to taste.
