  • 2 whole oranges
  • ⅔ cup honey
  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract

  • ½ cup fresh orange juice

Instructions

  1. Rinse oranges and simmer in water for one hour to soften skins. Drain and blend until smooth.
  2. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  3. In a bowl, mix blended oranges with honey, eggs, almond flour, ground pistachios, baking soda, and vanilla until smooth.
  4. Pour batter into the pan and bake for about one hour or until a toothpick comes out clean.
  5. For the glaze, combine honey and orange juice in a pot; boil then simmer until reduced by half.
  6. Brush glaze over the warm cake before cooling completely.
