  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • Salt to taste
  • 4 shallots (diced) or 1 medium onion
  • 1 rib celery (diced)
  • 45 sprigs of thyme
  • 2 cloves garlic (minced)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml chicken stock
  • 2 apples (peeled, cored, cut into wedges)
  • 125 ml plant-based cream alternative

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Pat the chicken dry with paper towels, season with salt, and brown in olive oil in a large casserole dish over medium-high heat. Remove when golden.
  3. In the same pan, sauté shallots, celery, and thyme until soft. Add garlic and cook for an additional 30 seconds.
  4. Stir in apple juice to deglaze the pan, then add flour and whisk in chicken stock until smooth.
  5. Return the chicken to the pot along with apple wedges and cover.
  6. Bake covered for 30 minutes; then uncover and bake for another 30 minutes.
  7. Sauté apple wedges separately until golden brown; stir them into the casserole before serving.
