  • 1 ½ cups sour cream
  • 1 small yellow onion (diced)
  • 2 large yellow onions (thinly sliced)
  • ½ cup chicken broth
  • ¼ cup all-purpose flour
  • Vegetable oil for frying
  • ¼ cup (½ stick / 57 g) unsalted butter (melted)
  • 2 teaspoons garlic (minced)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup (122.5 g) whole milk (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine thawed hash browns with melted butter, cheddar cheese, sour cream, diced onion, minced garlic, flour, salt, black pepper, cayenne pepper, chicken broth, and milk.
  3. Pour the mixture into a greased 9×13-inch baking dish.
  4. For the crispy topping, fry sliced onions in vegetable oil until golden brown.
  5. Bake the casserole for about 50 minutes until bubbly and golden on top. Add crispy onions during the last few minutes.
