  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by cutting the Pâte Sucrée dough into portions, pressing them into tartlet pans, and freezing for shape retention.
  2. Bake at 375°F until golden brown, pricking with a fork and using parchment paper with weights to prevent puffing.
  3. Make the strawberry jam by simmering chopped strawberries and sugar until thickened.
  4. For the pastry cream, heat sweetened condensed milk, whole milk, and heavy cream. Temper egg yolks mixed with cornstarch, then combine until thickened.
  5. Cool the pastry cream before assembling: fill tart shells with strawberry jam followed by piping the cream on top.
  6. Garnish with halved fresh strawberries.
