  • 3/4 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and toast the pecans on a baking sheet for about 5–7 minutes until fragrant.
  2. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined; avoid overmixing.
  6. Fold in the cooled toasted pecans gently.
  7. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet with space between each cookie.
