  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • 2 tsp dried Italian herbs (oregano and basil)
  • Salt and pepper to taste
  • 1.5 lbs baby potatoes, halved or quartered
  • 1 cup freshly grated parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, combine minced garlic, olive oil, salt, pepper, and dried herbs. Rub this mixture over the chicken breasts.
  3. Toss the halved baby potatoes with olive oil, salt, pepper, and half of the parmesan cheese until well coated.
  4. Arrange the seasoned chicken and potatoes in the baking dish and sprinkle the remaining parmesan on top.
  5. Bake for 30-35 minutes until the chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
