  • 900g cauliflower florets
  • 240ml low-sodium chicken broth
  • 5g salt, plus extra to taste
  • 42g unsalted butter, cubed
  • 5g fresh thyme, chopped
  • Black pepper to taste

Instructions

  1. Prepare the broth by boiling chicken broth and salt in a wide pot.
  2. Add cauliflower florets, cover, and steam for about 20 minutes until fork-tender.
  3. Transfer steamed cauliflower to a food processor. Whisk together cubed butter with a few tablespoons of hot broth in the pot until smooth.
  4. Pour the buttery mixture into the food processor along with thyme and pepper; blend until completely smooth.
  5. Adjust consistency with more warm broth if desired and serve warm.
