  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese (or nutritional yeast), parsley, garlic, oregano, salt, and pepper. Mix gently until combined.
