  • 1 pound ground chicken breast
  • ⅔ cup uncooked white rice
  • 1 small red onion
  • 2 cloves garlic
  • 1 zucchini
  • ½ cup cherry tomatoes
  • ½ cup kalamata olives
  • ½ cup feta cheese
  • Fresh dill
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • ½ cup water
  • lemon wedges for serving

Instructions

  1. Preheat your oven to 350°F.
  2. Cook rice according to package instructions.
  3. Halve and seed the bell peppers, placing them cut side up in a baking dish.
  4. In a skillet, heat olive oil and cook the ground chicken with salt and pepper until no longer pink.
  5. Add diced onion, garlic, and zucchini; sauté for about two minutes.
  6. In a large bowl, combine cooked rice, chicken mixture, cherry tomatoes, olives, feta cheese, and dill.
  7. Stuff each bell pepper generously with the mixture. Sprinkle additional feta on top and add water to the baking dish.
  8. Cover with foil and bake for 40-45 minutes until peppers are tender. Serve with lemon wedges.
