  • 4 large russet potatoes (washed and patted dry)
  • 4 tablespoons melted unsalted butter (divided)
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper

Instructions

  1. Preheat your oven to 425°F.
  2. Place a potato between two chopsticks or skewers to prevent slicing through completely. Cut vertical slits about ⅛ inch apart without cutting all the way through.
  3. Brush half of the melted butter over the potatoes, ensuring you get inside the slits.
  4. Generously season with kosher salt and pepper.
  5. Bake for 30 minutes, then gently pull apart the slices with a knife for extra crispiness.
  6. Brush remaining melted butter over each potato and return to the oven for another 30-35 minutes until crispy outside and tender inside.
  7. Serve warm with additional salt and pepper if desired.
