  • 4 large eggs
  • 4 tbsp sweetener (erythritol, monk fruit sweetener, honey, maple syrup)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (or coconut flour)
  • 1 1/2 cups mixed berries (fresh or frozen)
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your baking dish.
  2. Blend the cottage cheese until smooth and creamy.
  3. Add eggs, sweetener, vanilla extract, cornstarch, and lemon zest to the blender; blend until well combined.
  4. Pour the mixture into the prepared baking dish and bake for 10–15 minutes until edges start to set.
  5. Sprinkle berries evenly over the partially baked clafoutis and return to the oven for another 30–35 minutes until golden and slightly jiggly in the center.
  6. Allow to cool briefly before slicing; serve warm or chilled.
