  • 1/2 cucumber (diced)
  • 1/4 red onion (diced)
  • 1/4 cup kalamata olives (sliced)
  • Salt and pepper to taste
  • Juice of half a lemon
  • 2 tsp fresh dill (chopped)
  • 1 tbsp fresh parsley (chopped)
  • 1 cup coconut yogurt
  • 3 tbsp cucumber (diced)
  • 2 tsp fresh dill
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dill
  • 1 tbsp parsley
  • Juice of 1/2 lemon
  • 2 tsp olive oil
  • 1 lb ground chicken
  • Rice or cauliflower rice

Instructions

  1. In a bowl, mix diced cucumber, red onion, sliced olives, lemon juice, dill, parsley, salt, and pepper to create the Greek salsa. Set aside.
  2. In another bowl, combine coconut yogurt with diced cucumber, dill, garlic powder, salt, and lemon juice for the tzatziki sauce. Chill in the fridge.
  3. Heat olive oil in a skillet over medium heat and cook ground chicken until browned. Season with garlic powder, onion powder, oregano, dill, parsley, lemon juice, salt, and pepper.
  4. To serve, place rice or cauliflower rice in bowls and top with cooked chicken, Greek salsa, and tzatziki sauce.
